At the start of the year, you’ll often find onions, radishes, sweet potatoes, and cauliflower thriving before the warmer spring months arrive. These nutrient-packed vegetables are perfect for creating flavorful meals beyond just a simple sauté.
For this recipe, we’re making street tacos, where spicy roasted vegetables meet crisp pickled radishes. With just a few simple spices and shelf-stable ingredients, you can transform these fresh veggies into a delicious, fiber-rich meal bursting with vitamins A and C. Stack your plate high, savor the flavors, and enjoy!
Pickled Radishes and Onions
Ingredients:
15 – 18 radishes
½ cup apple cider vinegar
1 tablespoon granulated sugar
1 ½ teaspoons salt
1 cup hot water
- Slice radishes as thinly as you can and chop the onions
- Measure out and combine apple cider vinegar, salt, sugar, and hot water into a bowl
- Stir everything until the sugar and salt are dissolved
- Put all the sliced radishes and onions into a jar and pour over your pickling mixture. Set the jar aside for an hour.
- After an hour, cover the top and store in a fridge for up to three weeks.
Sweet Potato and Cauliflower Tacos
Ingredients:
1 pound of sweet potatoes, peeled and chopped into cubes
1 pound of cauliflower, broken into small pieces
1 teaspoon salt
1 teaspoon ground cumin
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon paprika
1 to 3 teaspoons chili powder (optional for heat)
Olive oil
Flour Tortillas
Diced Cabbage
- Heat oven to 400 degrees Fahrenheit
- In a large bowl, toss sweet potatoes and cauliflower in olive oil until all the pieces are coated
- Add salt, cumin, garlic powder, onion powder, paprika, and chili powder (optional) to evenly coat
- Spread vegetables evenly on a baking sheet
- Roast vegetables for 45 minutes, tossing once for even color
- Heat the tortillas in a pan
- Place the sweet potatoes and cauliflower on the warmed tortillas, top with cabbage and pickled radishes
